My oldest son is a big fan of the Redwall series and decided today that he was going to try to make the “honey moles” described in one of the books. They are little pastry bundles with honey and fruit (berries, I think?).
Of course, it being the middle of winter, I didn’t have any fresh berries. I did have some cranberries in the freezer, though. ;0)
This recipe is David's own invention. He found the pastry recipe. He gathered the ingredients. He assembled it all. I did help roll out the dough. But the rest is his.
To make 16-18 “Honey Moles,” you will need:
- pie dough (we used the Easy Buttermilk Pastry recipe for a 2-crust pie in the Betty Crocker Cookbook)
- rinsed cranberries (or other berries), 3 small berries per “mole”
- brown sugar
- a round cookie cutter or cup (about 2”-2-1/2” across)
- plenty of patience
- someone to clean your kitchen
- Preheat oven to 375 degrees F.
- Roll out your dough (he divided it into 2 batches) like you would for a pie crust.
- Using your cookie cutter or cup (be sure to dip in flour), cut out circles.
- Remove excess dough and eat it (or save it to reroll).
- Place 3 cranberries in the center of each circle.
- Squirt a generous blob of honey on top.
- Gather up the edges and seal them together to form a little bundle (taco style works best).
- Transfer to a cookie sheet sprayed with no stick spray (they do leak), leaving a couple of inches between bundles.
- Put a bit of brown sugar on top of each one (fingers work best, you have to kinda squish it).
- Bake for approximately 25 minutes, or until golden.
- Remove from the sheet to some wax paper, so they don’t get stuck.
- Cool, but eat while still warm.
And the verdict?
Yum! Flaky, crispy, slightly sweet, and tart.
We did have some pop open. But they were just as yummy. You could try baking them in muffin cups.
It has been a non-Monday-ish Monday. We need to do this sort of thing more often. And it was definitely a learning experience.
